Stuffed Sweet Potatoes
2 Sweet Potatoes
1/2 Red Pepper
1 Shallot
1 cup Black Beans
1 cup Spinach
1 clove Garlic
1 large (2 small) Avocado
1 Lime
2 tbsp Olive Oil
1/2 tsp Chipotle Powder
1 cup Salsa
1/4 cup Green Onion
Salt and Pepper
Preheat the oven to 375°F. Cut two sweet potatoes length wise and drizzle 1 tbsp of olive oil over top. Add salt and pepper and place in the oven for 45 minutes.
Add 1/2 a chopped red pepper, 1 minced shallot, and 1 tbsp of olive oil to a skillet on medium heat. Cook for 5 minutes.
Add 1 cup of black beans, 1 minced clove of garlic, 1 tsp of chipotle powder, salt and pepper, and 1 cup of spinach. Stir until the spinach is wilted then remove from heat.
Remove the sweet potatoes from the oven and scoop out the middles. Mix the sweet potato with the bean mixture and stuff the sweet potato boats with the mixture. Place back in the oven for 10 minutes.
In a bowl, mash 1 large (or 2 small) avocados with the juice of 1 lime and salt and pepper.
Remove the sweet potatoes from the oven, top with salsa, avocado, and green onion. Enjoy!
