Beet and Potato Skewers
2 Baking Potatoes
4 Beets
1/4 cup Olive Oil
2 tbsp Italian Herbs
4 Skewers
Soak wooden skewers in cold water for 20-30 minutes. This will prevent the skewers from burning.
Cut potatoes into rounds as thin as you can and place in a bowl with 1/4 olive oil, 2 tbsp of Italian herbs, salt and pepper. Let sit for 10 minutes.
Cut 4 beets into thin rounds and season with salt and pepper.
Assemble the skewers, rotating between potatoes and beets. I did 3 potato slices to every 1 beet slice.
Line a baking sheet with tin foil. Tear 2 more long pieces of tin foil, roll them, and place on either side of the sheet.
Place skewers on the tin foil and bake in the oven at 400°F for 45 minutes to 1 hours. Until the potatoes are crispy. Remove from oven and enjoy!
