Rainbow Quinoa Salad

2 cups Quinoa

2 cups Halved Rainbow Tomatoes

1 1/2 cups Cucumber

1 cup French Beans

3/4 cup Red Pepper

1/2 cup Olive Oil

1/4 cup Apple Cider Vinegar

1 Lime

1 tbsp Minced Garlic

1/4 Fresh Basil

Salt and Pepper to Taste

  1. Cook 2 cups of quinoa according to the package instructions

  2. Cut 2 cups of rainbow tomatoes, 1 1/2 cups of cucumber, 1 cup of french beans, 3/4 cup of red pepper.

  3. In a small bowl, combine 1/2 a cup of olive oil, 1/4 cup of apple cider vinegar, 1 tbsp of minced garlic, 1/4 cup of cut fresh basil, salt and pepper, and the juice from one large lime.

  4. Combine all ingredients together and serve immediately or let sit overnight.
