Pesto Tomato Chicken

2 Chicken Breasts

1 Heirloom Tomato

1 tbsp Balsamic Vinegar

1 1/2 tbsp Honey

1/2 cup of Pesto

  1. Cut chicken breasts in half lengthwise. Add 1/4 cup of pesto to each chicken breast half. (See my pesto recipe!)

  2. Cut a heirloom tomato in slices and cut again to fit the size of the chicken breast. Place on top.

  3. Place the chicken on a lined baking sheet in the oven at 350°F for 20-25 minutes. Remove from oven and drizzle balsamic and honey. Return to the oven for an additional 5-10 minutes.

  4. Remove from the oven and enjoy!
