Key Lime Crepes (Sugar-Free and Dairy-Free)
4 Limes
3 Egg Whites
3 Bananas
1/4 cup Honey
Zest of 1 Lime
Crepes:
1 cup Flour
1 Eggs
1 tbsp Vegetable Oil
1 tbsp Honey
1 1/2 cup Oat Milk
Mix 1 1/2 cup of flour, 1 cup of oat milk, 1 egg, 1 tbsp of honey, and 1 tbsp of oil in a large mixing bowl until smooth. Add more milk if necessary so that it is a smooth and runny consistency.
Preheat a frying pan on medium heat. Soak a small piece of paper towel with oil and wipe down frying pan. Once the pan is hot, add 1/2 cup of crepe batter, angle the pan in all directions to evenly coat the bottom of the pan. Cook for 2 minutes on each side. Grease the pan between every crepe.
In a mixing bowl, combine 3 egg whites, the juice from 3 limes, 2 tbsp of honey and beat with a hand mixer until it is whipped.
Fill each crepe with 1-2 tbsp of honey and 1/2 a banana. Roll and top with whipped key lime mixture, lime zest, and lime juice.
Serves 6.
