Honey and Ginger Glazed Salmon with Mushrooms

Salmon:

2 Salmon Steaks

2 tbsp of Vegan Butter

2 tbsp Sesame Oil

1 tbsp Paprika

1.5 tbsp Onion Powder

1.5 tbsp Grated Ginger

1 clove Garlic

1/4 cup Soy Sauce or Coconut Aminos

1/3 cup Honey

Salt and Pepper

Mushrooms:

5 cup Cremini Mushrooms

1 tbsp Grated Ginger

1 tsp Onion Powder

1 tsp Paprika

1/4 cup Soy Sauce or Coconut Aminos

Salt and Pepper

  1. Combine 5 cups of mushrooms, 1 tbsp of grated ginger, 1 tsp of onion power, 1 tsp of paprika, 1/4 cup of soy sauce, salt, and pepper in a pan on medium heat. Cover and cook for 5-10 minutes, stirring occasionally.

  2. Heat an iron skillet on medium high heat with 2 tbsp of butter and 2 tbsp of sesame oil. Once it is hot, add 1.5 tbsp of minced ginger, 1 clove of minced garlic, 1/4 cup of soy sauce, and 1/3 cup of honey. Cook for 1 minute.

  3. Roll 2 salmon steaks in 1 tbsp of paprika, 1.5 tbsp of onion powder, salt, and pepper so that the steaks are completely covered in seasoning.

  4. Place the salmon in the pan and cook for 3 minutes while continuously spooning the liquid on top. Place the skillet in the oven on high broil for 5-6 minutes. Remove from the oven and immediately serve.

Cremini Mushrooms are an excellent source of a variety of B vitamin B. This decreases fatigue and increases brain function.
