Dairy-Free Cesar Dressing
Cesar dressing is a staple. I love making this dressing because it’s so simple and delicious and it goes with everything. I even used this in one of my other recipes, Poached Eggs and Avocado Toast, where I used it as a base on the toast before I put the avocado on top. The key to this cesar dressing is to leave it overnight! You can definitely make it and use it right away, but I find that once it sits and all the flavors marinate together, the dressing doesn’t taste as nutty. If you have it right away, you can really taste the tahini, which is good too. I love tahini but I’d rather my cesar dressing taste more like garlic and lemon. I also add in the water one tablespoon at a time and mix after each one added. The reason I do this is to ensure I get the right consistency for what I’m feeling. Once the dressing is mixed and set, serve on top of salads or your favorite dishes!
1/3 cup Tahini
1 1/2 tsp Apple Cider Vinegar
2 tbsp Olive Oil
3 tbsp Lemon
1 tbsp Minced Garlic
1 tbsp Vegan Parmesan
3-4 tbsp Water
1 1/2 tbsp Chives
Salt and Pepper to taste
Mix all the ingredients in a jar and let it sit in the fridge overnight.
