Hot and Honey Chicken
This chicken is everything. It’s sweet, spicy, crispy, and tender. And not to mention, it is super easy! I start by placing the chicken thighs in a bowl with honey and chopped hot chili peppers. (I used the Hot Long Chili Peppers from Tutto Calabria) I like to open the chicken thighs up so that there is more surface area that’s able to absorb the flavors. You can let this marinate for anywhere from half an hour to overnight. I left it in the fridge for about 3 hours. Once the chicken has marinated, line a baking sheet with parchment paper and place the chicken thighs smooth side down. I like to drizzle a tiny bit more honey on top and sprinkle with cayenne pepper and salt. Place the chicken in the oven on broil.
It’s key that you keep an eye on it to make sure it doesn’t burn, especially if your oven is super powerful. I leave the chicken in for around 8 minutes, just until the chicken is starting to turn golden brown. Flip the chicken and drizzle a bit more honey, cayenne pepper, and salt, and let cook for another 10-15 minutes. I like it when it goes super dark a crispy but it’s up to you. I find broil is such a risky game. You check the oven one minute and everything looks great and then 2 minutes later BOOM everything is burnt. So when I notice the chicken starting to get super brown, I’ll turn the oven light on and watch it until its ready. After it’s done to your liking, let sit for a couple of minutes to cool down and enjoy!!
2 lbs Chicken Thighs
1/2 cup Honey
2 tbsp Hot Chili Peppers
1 tsp Cayenne Pepper
Salt to taste
Place chicken thighs in a boil with honey and chopped hot pepper. Let marinate for half an hour to overnight.
Line a baking sheet with parchment paper and lay the chicken thighs smooth side down. Drizzle a bit of honey, cayenne pepper and salt over the chicken.
Set your oven to broil and cook the chicken for 8-10 minutes.
Flip the chicken and drizzle more honey, cayenne pepper and salt, cooking again for 10-15 minutes.
Remove the chicken from the oven and let sit for 2-3 minutes.
