Summer Chickpea Salad

2 can Chickpeas

1 can Black Beans

3 cup Broccoli (2 heads of broccoli)

1.5 cup Celery

2 Shallots

3 cloves Garlic

1 tbsp Ginger

1/4 cup Sesame Oil

3/4 cup Rice Vinegar

3 tbsp Oyster Sauce

1 tbsp Chili Flakes

  1. Cut 1.5 cups of celery, 2 cups of broccoli, and 2 shallots and place in a bowl with 2 cans of rinsed chickpeas and 1 can of rinsed black beans.

  2. In a small bowl, combine 3 cloves of minced garlic, 1 tbsp of grated ginger, 1/4 cup of sesame oil, 3/4 cups of rice vinegar, 3 tbsp of oyster sauce, and 1 tbsp of chili flakes.

  3. Combine sauce with the beans, chickpeas, and veggies and let marinate for at least 30 minutes.
