Stuffed Artichokes and Cauliflower Mashed Potatoes
2 Artichokes
1.5 cup Vegan Cheese
1/2 cup Breadcrumbs
1 Chicken or Vegetable Bouillon
1/2 cup Water
1 Lemon
1 head Cauliflower
2 Potatoes
1/4 cup Vegan Butter
1/2 cup Oat Milk
1 tbsp Onion Powder
Salt and Pepper
Boil 1 head of cauliflower and 2 potatoes until tender. Drain and add to a food processer or blender with 1/4 cup of vegan butter, 1/2 cup of oat milk, 1 tbsp of onion powder, salt, and pepper. Blend until smooth.
Wash 2 artichoke thoroughly and cut the top off (about an inch). Bring a pot of water to a simmer and add the artichokes, cooking for 30-40 minutes or until the outer leaves could easily be pulled off.
Cut the stem off the artichokes and gently pull the leaves open. Mix 1.5 cup of shredded vegan cheese and 1/2 cup of breadcrumbs in a small bowl and stuff the artichokes. Try to gently stuff between all the leaves.
Place the artichokes in a baking dish. In a small bowl, mix 1 chicken or vegetable bouillon with 1/2 cup of warm water. Pour half the mixture over the artichokes and the other half in the bottom of the pan. Squeeze the juice of 1 lemon over the artichokes and broil on low-medium for 20 minutes or until golden brown.
Serve artichokes with cauliflower mashed potatoes and a slice of lemon and enjoy!
