Poached Eggs and Avocado Toast
So to start off, this is one of my favorite breakfasts! I love making it on the weekend when I have a bit more time. It makes me feel like I’m out for a fancy brunch. I start by mixing the oil in a bowl with the cumin, paprika, and cayenne pepper and brushing the oil on the bread. Then I toast the bread in the frying pan until golden brown on each side. While the bread is starting to toast, I smash the avocado in a bowl with cumin, paprika, cayenne pepper, and some salt and pepper.
It took me a long time to build up the courage to poach eggs without using an egg poacher. If you have an egg poacher and like using it, totally go for it. I like the texture of the eggs better when they’re poached directly in the boiling water. To do this, I bring a pot of water to a boil and add a bit of white vinegar. I then turn down the temperature so that the water is only at a light simmer. Swirl the water around the pot with a spoon so that the water is slowly spinning around. We don’t need a tornado going on in there. Crack the egg in the center of the pot and let it cook for 3-5 minutes. While the eggs are cooking I like to spread a little Dairy-Free Cesar Dressing (www.beachedeats/sides/dairy-free-cesar-dressing) on the toast. Spread the smashed avocado on top and then add the poached egg. Finish with some cumin, paprika, cayenne pepper, and some chives sprinkled on top.
1 Avocado
2 Eggs
2 Slices of Bread
3 tbsp White Vinegar
1/4 cup Olive Oil
1 tbsp of Dairy-Free Cesar Dressing
1 tsp Paprika
1 tsp Cumin
1 tsp Cayenne Pepper
1 tbsp Chives
Salt to taste
Mix the olive oil in a bowl with the cumin, paprika, and cayenne pepper and brush the oil on the bread. Place the bread in the frying pan and toast on medium-high heat until golden brown on either side.
Smash the avocado in a bowl with cumin, paprika, cayenne pepper, and some salt and pepper.
Bring a pot of water to a boil and add the white vinegar. Turn down the temperature so that the water is only at a light simmer. Swirl the water around the pot with a spoon so that the water is slowly spinning around.
Crack the egg in the center of the pot and let it cook for 3-5 minutes.
Spread Dairy-Free Cesar Dressing on the toast.
Finish by spreading the smashed avocado on top and then add the poached egg. Sprinkle some cumin, paprika, and cayenne pepper and garnish with some chives.
